On Saturday, November 27th, Rita (The Raford Inn‘s wonderful owner and partner to Dane) celebrated her birthday. Kristen, one of our innkeepers, decided to make Rita her favorite kind of dessert: Organic Carrot Cake made with carrots from Shone Farm and fresh cream cheese frosting.

Over the holidays, having a good Cream Cheese Frosting recipe handy makes baked holiday goodies even better. Use it in the following ways:

Make ginger snap cookie sandwiches

Put in a plastic baggie, snip the corner and drizzle over your favorite holiday breads, like pumpkin, spice cake, gingerbread, or even zucchini bread.

Cream Cheese Frosting

  • 8 oz  Cream Cheese, softened but still cool
  • 5 Tablespoons Butter, softened but still cool
  • 1 Tablespoon Sour Cream
  • 1/2 teaspoon Vanilla Extract
  • 1 1/4 cups Confectioner’s Sugar

For the frosting: When cake is cool, process cream cheese, butter, sour cream, and vanilla in clean food processor workbowl until combined, about 5 seconds, scraping down bowl with rubber spatula as needed. Add confectioners’ sugar and process until smooth, about 10 seconds.
