Our Antipasto!

Have you ever fallen into a Pot Luck rut? A friend mentions that bring-a-dish event and your mind goes to the same couple of easy-prep finger foods that often crowd the red checkered table cloth? Well here, at the Raford Inn, we have found a new way of presenting one of our favorite pot-luck classics that will surely stand out: the Italian Antipasto…on Skewers! It’s amazing what a few elegant sticks can do to the visual presentation! We tossed a glass filled with crisp bread sticks in the center and are set to go.

Interested in making this yourself? Here is what we used:

One jar of Kalamata olives, a jar green olives w/pimentos, a container of fresh marinated mozzarella balls, a quarter-pound of prosciutto, one container of cherry tomatoes, and a jar artichoke hearts marinated in oil and herbs. That’s it! Other antipasto ingredients include black olives, pepperoncini, salami, red peppers, marinated mushrooms, etc. Just skewer one or two of each ingredient and place on a serving tray of your choice. We were pleased to use some of our home grown Rainbow Chard to line the serving tray as it  helped add even more color to the vibrant bouquet of marinated goodness.

For all of you wine lovers, this would pair fantastically with a Pinot Gris- or any chilled white wine for that matter! One of our favorite whites is the Viognier at Thomas George Estates!
